Preserving Eggs

“Many years ago we didn’t know what it was to go to the store and buy a dozen eggs. We went out and got seagull eggs, duck eggs, and put them in [a] water glass, and before that, when my mother was a little girl, they would render seal oil and put all their wild game, eggs, whatever in there, since we didn’t have a refrigerator or freezer, and it would keep forever as long as air didn’t get to it.” – Rosie Lamkard, Cordova
